balsamic berry crumb cake

hey procrastibakers, long time no see! i’ve been meaning to post for months, but life has been crazy. i was working, until very recently, as a baker in a grocery store, which would seem like something right up my alley, right? but the hours were awful (ie, waking up between 330-4 am, punching in at 5am) and despite that, my hours were often cut arbitrarily; they made fun of me for going to college/grad school, someone locked me in the walk-in freezer, they paid me $3-an-hour less than the maintenance guy. and despite all that, i ran around like crazy at the crack of dawn churning out the same donuts, bagels, muffins and breads every day– so the last thing i wanted to do was come home at the end of the day and bake some more “for fun.” it just wasn’t the job for me, and so i’ve effectively donned my apron-and-hat uniform for the last time (hers is much, much cuter than mine).

so, time to refresh my monster.com profile and try to network my little unemployed brains out. i’m pretty optimistic even though the economy is still sad and the job market is flooded with applicants. if anyone out there is looking to hire a team player with a lot of motivation and a friendly disposition, email me. i’ll send you a cupcake along with my resume.

anyway, i woke up this morning (nearly 2 weeks after my last day at the bakery) and for the first time in a long time, i wanted to open up my recipes, find something delicious, and bake again. i cleaned the whole kitchen, broke out my lovely kitchenaid stand mixer, and cracked open the bon appetit desserts cookbook, which my boyfriend’s wonderful mother, kathy, gave me last christmas.

bon appetit suggested i make a blueberry coffee cake; i decided i’d tweak it a little because a) i had no blueberries and b) it wouldn’t be procrastibaking if i just meekly followed a recipe without getting a little funky.

sugar cookie base

it’s sort of funny that my welcome-back blog post is also one of the last blog posts in the original procrastibake kitchen. that’s right, i’m leaving my apartment here in the heart of boston and going… well, somewhere new. and you know how it is when it’s time to pack up and leave– lots of packing, and throwing things away, and finding new nail holes in the wall to patch up. blargh.

anyway, why bother with silly (depressing) things like that when we could be baking, instead?

today’s recipe is a new favorite, and it’s one of the most versatile. sure, sugar cookies are delicious, and these are no exception. sweet without being TOO sugary, a hint of vanilla– they almost melt in your mouth, and are especially perfect paired with pumpkin coffee. thank you, dunkin donuts. BUT– these cookies are also the perfect base cookie: chocolate chip? macadamia nut? blueberry? maple? butterscotch? pumpkin? yes! as scrumptious as it is on its own, this base goes perfectly with whatever you decide to add to it. and, this recipe yields lots of cookie dough, so freeze it plain and you’ll be able to add fresh ingredients to your cookies as you acquire them!

homemade milanos

procrastinating: laundry day

prep time: 10 minutes

bake time: 5-7 minutes each batch

cleanup time: 7 minutes

time spent procrastibaking: roughly 30 minutes.

hi friendly procrastibakers! after putting it off forever, i finally have 3 loads in the laundry as we speak (or as i type). i snuck down to the laundry room with a huge bag and another pillowcase full of clothes, towels, sheets– you name it, it had to get washed. i sorted, i pulled clothes right-side-out again, i even shoved it into respective bags– but ugh. taking it down to the laundry room, putting it in machines, waiting for the machines to finish, switching it over to dryers, waiting for the dryer to finish, folding everything, bringing it upstairs, hanging everything up… it’s almost as tedious to do as it is to type!

but i knew i couldn’t tackle laundry day without some kind of reward (and by reward i mean chocolate, not clean clothes). so i decided i’d try and recreate those delicious cookies: the milano. this delectable treat by pepperidge farms is one of my favorite store-bought cookies, and while my ultimate creation falls a little short of that brand name quality, it was an excellent first try. soft wafers, rich chocolate– it doesn’t matter if it’s exactly the same, it’s still going to be yummy. plus, this was super easy to do. laundry seems more manageable knowing i have these to look forward to!

blueberry shortbread crumble!

good evening everybody. i finally got the butter to procrastibake with, and my gut instinct was “in the morning, katie. go to bed.” but gosh darn it, this is a procrastination blog, and that means i’ll put off anything in the name of baking– even sleep! so let’s pick up where we left off: shortbread.

this shortbread is light and buttery and would be delightful on its own, but it’ll serve as the crust and crumble top to the tangy sweet blueberry spread we made earlier today in this post. let’s go!

blueberry spread

procrastinating: making a doctor’s appointment

hey there, procrastibakers. a few weeks ago i was at the gym playing pickup basketball with some guys who looked like the cast of 300, when i felt my already-sore achilles tendon pang a little more aggressively. i’ve had some fun sports injuries in the past (ie, two reconstructive knee surgeries) so i figured before it got to that point,  i’d rest it and ice it and it’d be a-ok. but it’s been a little over 2 weeks of rest, and still… significant ouch. should i admit defeat and call the doctor? orrrr… should i make blueberry shortbread bars and hope that along with amazing antioxidant power, blueberries also heal tendons?

pass me the berries and an ace bandage and let’s bake.

currently i have half a stick of butter in the kitchen, so that’s just not going to cut it for the shortbread. hopefully someone in my family will take pity on me and chauffeur me down to the grocery store (or better yet, pick some up!) — but in the meantime, we can prep this blueberry spread for the bars. it’s delish in the shortbread recipe, but just as good spread on toast or pancakes, in thumbprint cookies, or anywhere else you need a little blueberry pick-me-up.

esme’s cupcakes

i know this blog is usually dedicated to me putting off something in favor of baking, but today’s recipe was specially requested by my friend brittany for her soon-to-be six year old’s birthday this week. and while i have no problem putting off my own things (paperwork, dishes, etc), i try to follow up more promptly on baked goods for my friends. esme is adorable and like other girls her age, she’s all about cupcakes, fruit, and the color pink. i’ve got some good ingredients and cute tools to use, so let’s make her something pretty!

maple butter cookies

procrastinating: doing my hair.

prep time: 10 minutes (plus 10-15 minutes refrigerating time)

bake time: 15 minutes

okay, so i had one of those nights where i fell asleep at like, 7pm, and so naturally i woke up at 1am ready and raring to go. i  don’t know what’s the deal, but it did allow for a lot of productivity– i cleaned my bedroom, i did all my dishes (even the super jammy ones from yesterday!), i watched three movies, i sorted laundry. there’s not a whole lot left for me to do– except to wash my hair. the lady procrastibakers out there know what i’m saying– it takes so freaking long to do my hair. comb, wash, condition, rinse, brush, dry, straighten. i know i sound like i’m complaining, but even thinking about it’s an ordeal.

so instead, i think i’ll put on some coffee and make an easy, delicious breakfast cookie this morning. simple, buttery, rich– these cookies are super basic and need only a few ingredients, but the ones we do use blend together perfectly. and the touch of maple syrup is good anytime, but especially with your morning coffee. let’s go!
