hey there, procrastibakers. happy february!

today in massachusetts, we’re experiencing yet another major snowstorm (along with most of the rest of america– yay snowmageddon!), which i, for one, appreciate. snowstorms are a wonderful opportunity to stay home and snuggle up, throw on some comfy sweats, and put on some old favorite movies (ahhh, kelly clarkson!).

okay, correction: unemployed snowdays are fun. the soul-crushing inability to acquire gainful employment stings a little less as the snow begins to fall and covers everything in clean white purity. you’re not home alone today, because the rest of the world is snowed in with you. and if you can manage to send in a few job applications while the world is snowy and sleepy, well, you’re ahead of the game, aren’t you?

since i still haven’t heard back from mcdonalds about being their next fry technician (thank you, higher education), i think some pre-job training might edge me ahead of the throngs of competition. and so, i present to you the snowday treat: pumpkin doughnuts. fried to a golden perfection, dipped in spicy sugar– they may not be baked, but they’re helping me avoid the 8+ inches of snow in the driveway, and that’s procrastibaking enough for me. let’s go!

cranberry pumpkin scookies

 

 

not quite a scone, not quite a cookie

procrastinating: a new recipe.

prep time: 20 minutes

bake time: 13 minutes a batch

cleanup time: 7 minutes

time spent procrastibaking: 40 minutes

hey there, procrastibakers. so, i made this recipe… days ago. i’m sorry. life gets crazy– which has been my standing excuse lately, i know– but it’s true. i’m itching to bake something new, but i can’t until i post last week’s (?) creation. sorry for the delay! hopefully the next one will be more prompt.

anyway, i was sort of shooting for this oatmeal-y, pumpkin-y, cranberry-…y (eh, go with it) scone, but they never really retained that dry, crumbly, fluffy shape– instead, they sort of melted down into cookies. so, ya know: half-scone, half-cookie… scookie (not to be confused with pickle-loving. ed-hardy-adorned, jersey shorite snooki— much less edible). this may have something to do with the fact that i totally eyeballed the ingredient quantities, because i made them at my boyfriend’s house, which is a wonderful place, but devoid of all my baking utensils.

anyway, these are a happy mistake, because they’re big, soft, thick cookies, but they’ve got the substance, thanks to oats and pumpkin taking the place of a ton of butter or sugar. and instead of chocolate chips, cranberries punctuate the cookies with a huge burst of flavor. let’s get baking!

kitchen sink cake #1

procrastinating: grocery shopping

prep time: 20 minutes

bake time: 55 minutes

cleanup time: 5 minutes

time spent procrastibaking: just under 90 minutes

i’m visiting home again this week, and as everybody knows, there are pros and cons to staying at your parents’ house. here are some of mine.  pro: two adorable puppies to play with!, con: sneeze-inducing puppy hair. pro: seeing everybody you love and missed, con: less private space/time. pro: an electric mixer to procrastibake with, con: no real procrastibaking ingredients.

it’s been a couple days since i’ve procrastibaked, and the delay has been because i just don’t know what to bake. at my apartment in boston, my cupboards are stocked with flours and sugars and spices for creating all sorts of delicious treats– but my family, like most normal families, doesn’t grocery shop with confections in mind. sure, i could make myself a bologna sandwich, but somehow i just can’t decide how to turn that into a baked good.

so this is the first in a series i’ll call: the kitchen sink. i’ve scoured my parents’ kitchen for ingredients i think might turn into something yummy, and we’ll mix em up and see how things go.

today’s adventure: pumpkin spice cake.
