pb&j cupcakes!

procrastinating: making my valentine.

prep time: 20 minutes

cook time: ~20 minutes

decorating time: ~30 minutes

cleanup time: 10 minutes

time spent procrastibaking: about 90 minutes

salutations, procrastibakers. i spent the better part of yesterday crafting a totally unique and special valentine for my sweetie. it’s actually a lot harder than it sounds because i had scripted out everything i wanted to write, and then, naturally,  it got wiped from my computer. so i’m working on valentine 2.0, and while i think it’ll end up better than the original, the first edition took me several days to compose to perfection, and i’m just getting cracking on this version. yeesh!

without giving too much away, because he’s a supporter of the procrastibake movement and reads this blog (thanks, luke! <3), i may or may not have purchased over 600 stickers, various pink construction papers, and enough tape to make a prom dress. i’m trying not to make this kindergarten-esque, so i thought maybe i should bake before i break out the glitter glue.

pb&j is one of those quintessential treats that we all know and love. plus, i’m in the mood for one, but i’m out of bread, so why not fashion some representative cupcakes to take the place of the sandwich?

peanutbuttery goodness blends with sweet jelly to make a perfectly delightful afternoon snack. if i had children, i would send them to school with one of these in their lunchbox. well, maybe that’s not responsible parenting– but i can sure give my boyfriend one when he gets home, if only to soften the blow when he gets my “special” valentine next week. 🙂 let’s go!

sweetheart cupcakes

procrastinating: doing dishes.

prep time: 1 hour (+ 15 minutes after baking)

cook time: 20 minutes

cleanup time: 10 minutes

time spent procrastibaking: nearly 2 hours.

you know what, procrastibakers? i’ll admit it. i’m a love-aholic. and valentine’s day is right up my alley.

now i’m not talking about the guilt-ridden diamond commercials that punctuate every tv show leading up to v-day, or reservations at some swank, overcrowded restaurant. i don’t need a delivery of flowers from my sweetheart to know that he cares. (hopefully he doesn’t need diamonds or restaurants or flowers either, because procrastibake.wordpress.com is my only employer right now, and the only corresponding dough is the edible kind that goes in the oven and comes out sugary and delicious and frosted with icing).

whether you’re single or with someone special, valentine’s day has become less lovey and more… angsty. what happened to the time where it meant simple cardboard rectangles printed with hearts and clever cartoons passed without bias to everyone in your class? and who needs a special day to say “i love you,” anyway? why, you can show your one and only how much you care by sending a quick love-email, or by doing little things around the house, and you don’t need a holiday to do it. incidentally, i intend to do dishes any moment now to show my darling boyfriend how much i love him. annnnnnny moment now.

i could do chores to show my love… or, i could bake these delightful sweetheart cupcakes! yes, they’ll create a couple more dishes to do, but the sweet white batter of the cupcakes is accented with a red gooey center of blackberry jelly, and topped with a white fondant frosting and jelly heart… it’s love at first sight. shall we?

burnt-sugar brown-butter cupcakes

procrastinating: getting ready for next semester

hey procrastibakers! one week from today i’ll be back in the swing of classes and things– which means i’ll have lots more to procrastibake about! 🙂 i’m actually pretty excited– i’ve missed my friends from my program, and i’m looking forward to writing and teaching again. but with every new semester comes the inevitable barrage of chores: organizing, cleaning, reading, etc. i ripped out the pages of my planner to make it current after months of disuse; i wrote out my class schedule on fancy paper; and i decided to craft up this new recipe today.

this past weekend was wonderful for lots of reasons– one small reason being the burnt sugar and butter ice cream i got to try, which was freaking phenomenal, and the inspiration behind these cupcakes. burnt sugar and brown butter are sort of intimidating ingredients, just because they’re tricky to get right, but if you can do it, the flavors are deep and totally worth it. let’s give it a go!

esme’s cupcakes

i know this blog is usually dedicated to me putting off something in favor of baking, but today’s recipe was specially requested by my friend brittany for her soon-to-be six year old’s birthday this week. and while i have no problem putting off my own things (paperwork, dishes, etc), i try to follow up more promptly on baked goods for my friends. esme is adorable and like other girls her age, she’s all about cupcakes, fruit, and the color pink. i’ve got some good ingredients and cute tools to use, so let’s make her something pretty!

pecan upside-down cupcakes

procrastinating: feeling glum.

prep time: 45 minutes

bake time: 25 minutes

cleanup time: 15 minutes

hey there, procrastibakers. i’m having one of those days where things are just not working out as much as i’d like them to. i spent the morning applying for jobs (and if last week was any indication, even getting a response would be miraculous); i am running precariously low on funds, even for a grad student; relationships and friendships are shifting and changing– basically, i’m in some sticky situations.

in reality, that’s not so fun, but it HAS served as the inspiration for today’s procrastibaking: sticky pecan upside-down cupcakes. sweet pecan glaze bubbles over the top and sides of these cupcakes, making each bite delectable. nutty, sticky– sounds about right. let’s get going!

official cupcake of the nhl?

some pairings just make sense: chocolate and peanut butter; bert and ernie.

but then there’s the latest dynamic duo straight out of nassau coliseum: hockey and cupcakes.

the new york islanders are the first nhl team to have an official team cupcake, made exclusively by the cupcake gourmet‘s owner amy brady.

according to yahoo contributor puck daddy‘s nhl blog, brady was quoted saying, “i think it fits very well. i’ve watched the islanders eat cupcakes before. i don’t see it as a big jump.”
