balsamic berry crumb cake

procrastinating: job hunting.

hey procrastibakers, long time no see! i’ve been meaning to post for months, but life has been crazy. i was working, until very recently, as a baker in a grocery store, which would seem like something right up my alley, right? but the hours were awful (ie, waking up between 330-4 am, punching in at 5am) and despite that, my hours were often cut arbitrarily; they made fun of me for going to college/grad school, someone locked me in the walk-in freezer, they paid me $3-an-hour less than the maintenance guy. and despite all that, i ran around like crazy at the crack of dawn churning out the same donuts, bagels, muffins and breads every day– so the last thing i wanted to do was come home at the end of the day and bake some more “for fun.” it just wasn’t the job for me, and so i’ve effectively donned my apron-and-hat uniform for the last time (hers is much, much cuter than mine).

so, time to refresh my monster.com profile and try to network my little unemployed brains out. i’m pretty optimistic even though the economy is still sad and the job market is flooded with applicants. if anyone out there is looking to hire a team player with a lot of motivation and a friendly disposition, email me. i’ll send you a cupcake along with my resume.

anyway, i woke up this morning (nearly 2 weeks after my last day at the bakery) and for the first time in a long time, i wanted to open up my recipes, find something delicious, and bake again. i cleaned the whole kitchen, broke out my lovely kitchenaid stand mixer, and cracked open the bon appetit desserts cookbook, which my boyfriend’s wonderful mother, kathy, gave me last christmas.

bon appetit suggested i make a blueberry coffee cake; i decided i’d tweak it a little because a) i had no blueberries and b) it wouldn’t be procrastibaking if i just meekly followed a recipe without getting a little funky.

pear-hazelnut bars

procrastinating: sleep.

prep time: 90 minutes

good morning, procrastibakers, and hello to my new friends at coler & colantonio who have profited from procrastibaking leftovers the last couple days. in an effort not to eat all of the sweetheart cupcakes or pumpkin doughnuts or savory scones (post coming soon!) my boyfriend brought everything to the office with him, and came home last night with empty containers, asking, “what are we going to bake for the office tonight?”

i pondered as we went to yoga class, and then panera for dinner afterwards, and then finally, as we meandered through super stop & shop, it struck me. a delicious cookie bar, light and chewy with a palate stimulating texture, perfect with a morning cup of coffee (or two). and so, the pear-hazelnut bar was conceptualized.

it wasn’t until we strolled in the door after 10pm that i realized it might be a long night. but who needs sleep when you can bake? let’s go!

sweetheart cupcakes

procrastinating: doing dishes.

you know what, procrastibakers? i’ll admit it. i’m a love-aholic. and valentine’s day is right up my alley.

now i’m not talking about the guilt-ridden diamond commercials that punctuate every tv show leading up to v-day, or reservations at some swank, overcrowded restaurant. i don’t need a delivery of flowers from my sweetheart to know that he cares. (hopefully he doesn’t need diamonds or restaurants or flowers either, because procrastibake.wordpress.com is my only employer right now, and the only corresponding dough is the edible kind that goes in the oven and comes out sugary and delicious and frosted with icing).

whether you’re single or with someone special, valentine’s day has become less lovey and more… angsty. what happened to the time where it meant simple cardboard rectangles printed with hearts and clever cartoons passed without bias to everyone in your class? and who needs a special day to say “i love you,” anyway? why, you can show your one and only how much you care by sending a quick love-email, or by doing little things around the house, and you don’t need a holiday to do it. incidentally, i intend to do dishes any moment now to show my darling boyfriend how much i love him. annnnnnny moment now.

i could do chores to show my love… or, i could bake these delightful sweetheart cupcakes! yes, they’ll create a couple more dishes to do, but the sweet white batter of the cupcakes is accented with a red gooey center of blackberry jelly, and topped with a white fondant frosting and jelly heart… it’s love at first sight. shall we?

cherry walnut biscotti

procrastinating: sleep.

prep time: 35 minutes

bake time (total): 75 minutes

cleanup time: 10 minutes

time spent procrastibaking: 2 hours

cock-a-doodle-do, procrastibakers. for some reason, i woke up at 3am this morning and just cannot make myself go back to bed. i think it might have to do with travel anxiety– i like to make sure i’m where i need to be, leave plenty of time to get to where i’m going, etc. and god forbid i roll over and go back to sleep, and then miss my bus (that doesn’t leave for another 5 hours). i know what you’re thinking, dear readers. “katie, that’s so far away! you’re already packed! set an alarm!” alas, i am stubborn, and the coffee is on. sleep is for the weak when there’s baking we can do instead. (plus, bus snacks! hello!)

i’ve tried making biscotti before and it’s always this sort of scone-biscotti hybrid (too thick, too soft, too bread-y to be biscotti)– but this recipe is pretty much fool-proof. i’m using walnuts and cherries because frankly, that’s what i’ve got. but you can easily substitute your favorites instead– hazelnuts, macadamias, chocolate chips, cranberries, cinnamon… man, i’m getting hungry. let’s bake.

procrastinating: packing a suitcase.

this weekend, i’m leaving home to visit home. like so many other twenty-somethings, it’s sort of hard for me to define where, exactly, home is– i currently live in (and love, besides its sports teams) boston, massachusetts; my entire family is from and in the metro new york area.  as thrilled as i always am to “go home,” the four hour chasm that separates one home from another can feel a little daunting. especially when staring at an empty suitcase.

so. let’s bake instead!

yesterday, we prepared one of my favorite frostings– the LLCC, or lemon lime cream cheese frosting. it’s light, summery, and perfect for piping into delicate lemon pirouette cookies. thin, flavorful, and super easy to bake, think of these as the cannoli’s summertime cousin.  mmm.
