irish soda bread!

procrastinating: taking the cat outside

prep time: 15 minutes

cook time: 45-50 minutes

cleanup time: 10 minutes

Éirinn go brách, procrastibakers! it’s one of my favorite weeks– st. patrick’s week– and naturally, it’s gorgeous out. the sun is shining, the air is losing its wintery bite, and spring is just around the corner. and no one is as astutely aware of the nice weather as our cat, anna. every time i’m near the front door, she runs over, stands on her hind legs, and meows at me to try and go outside. all in due time, anna. going outside means putting on shoes, and non-pajama-like clothes, and i have to build up the energy to do all that.

the other tell-tale sign that it’s st. patrick’s week (yes, week, not DAY), is that i have the grocery list to prove it. corned beef, potatoes, cabbage, and naturally, irish soda bread. i could just pick up a loaf while at the store, but they’re never as perfect as you’d like– maybe no raisins, maybe too many caraway seeds, maybe too dense… i mean, if you ask me, there’s no such thing as bad irish soda bread, but i think i can do a better job on my own.

i’m not sure if either one of my irish grandmothers have a soda bread recipe, so mine’s just an amalgamation of “hmm, this seems like a good idea” and “this sounds right.” i think regardless of the turnout, they’re proud of me, but personally, i think we have a winner. note to my friends in ireland: this may not be traditional soda bread, but irish-american cuisine certainly has its place as well–so put on your shamrocks, procrastibakers, and let’s get goin!

burnt-sugar brown-butter cupcakes

procrastinating: getting ready for next semester

prep time: 40 minutes

hey procrastibakers! one week from today i’ll be back in the swing of classes and things– which means i’ll have lots more to procrastibake about! 🙂 i’m actually pretty excited– i’ve missed my friends from my program, and i’m looking forward to writing and teaching again. but with every new semester comes the inevitable barrage of chores: organizing, cleaning, reading, etc. i ripped out the pages of my planner to make it current after months of disuse; i wrote out my class schedule on fancy paper; and i decided to craft up this new recipe today.

this past weekend was wonderful for lots of reasons– one small reason being the burnt sugar and butter ice cream i got to try, which was freaking phenomenal, and the inspiration behind these cupcakes. burnt sugar and brown butter are sort of intimidating ingredients, just because they’re tricky to get right, but if you can do it, the flavors are deep and totally worth it. let’s give it a go!

blueberry jelly drop cookies!

procrastinating: errands.

hey procrastibakers! i’m off to a bbq today, which is certainly more exciting than the myriad errands i have piled up since coming home. grocery shopping, mopping my floor, taking out the garbage– and those are just the errands i can think of from my perch here in my kitchen. yikes.

anyway, i hate going to things like this empty handed, and so i thought i’d make some jelly drop cookies with some fresh homemade blueberry spread (i forgot i still had blueberries in my freezer!). these cookies are super easy, super tasty, and quick to make, which is good, since i have to head out of here soon. nothing like the last minute!

blueberry shortbread crumble!

good evening everybody. i finally got the butter to procrastibake with, and my gut instinct was “in the morning, katie. go to bed.” but gosh darn it, this is a procrastination blog, and that means i’ll put off anything in the name of baking– even sleep! so let’s pick up where we left off: shortbread.

this shortbread is light and buttery and would be delightful on its own, but it’ll serve as the crust and crumble top to the tangy sweet blueberry spread we made earlier today in this post. let’s go!

esme’s cupcakes

i know this blog is usually dedicated to me putting off something in favor of baking, but today’s recipe was specially requested by my friend brittany for her soon-to-be six year old’s birthday this week. and while i have no problem putting off my own things (paperwork, dishes, etc), i try to follow up more promptly on baked goods for my friends. esme is adorable and like other girls her age, she’s all about cupcakes, fruit, and the color pink. i’ve got some good ingredients and cute tools to use, so let’s make her something pretty!
